  • MOST IMPORTANT OF ALL: More Nutrients in your food -  The higher temperatures of regular ovens that are needed to bake or cook certain foods, can also destroy some of the nutrients in the food. At lower temperatures, you preserve more of the food benefit. Also, convection ovens have none of the negative effects that microwave cooking can have on food and nutrition. Although the compact models have been convection and microwave, you can just use the convection controls and ignore the microwave (or just use to help defrost frozen foods, if desired).
